Made 100% with the small Garnacha Calabresa variety from old vines in Garcibuey (slate soil), Santibañez de la Sierra and Mogarraz (granitic soil). After a careful selection of the optimum collection moment (balance acidity / grade), it is proceeded to its incubation, passing through a manual selection table. A pre- fermentative maceration is carried out for 48 hours at 7/9 ºC, which gives way to a spontaneous alcoholic fermentation (we do not plant yeast) in stainless steel tanks of small volume and large diameter in order to accentuate the extraction of components with the own yeasts from the plots of origin, and always at temperatures below 21ºC. Decanted and lightly press later on stainless steel tank where it completes the malolactic fermentation in three weeks at a maintained temperature of 20 ºC. Subsequently, its aging of 12 months in french oak barrels of French and American oak second use, will highlight the expressiveness and provide the fair tannins, well integrated to the fruit character and mineral vividness. Finally, the wine is bottled and given a one-year rest period in a controlled temperature zone before going on the market. Without clarifications or filtrations or other subsequent treatments, therefore, it is likely that over time some totally natural sediment may appear.
Colour: Bright cherry with médium-low layer, typical of Calabrés, bright.
Aroma: Very expresive on the nose. Mature fruit, mount herbs, liquorice, flower petals.
Flavour: Fresh and expressive. Well structure. Ripped black fruit. Balsamic hints. Full, long and serious.
