First selection of varieties and soils (slates, clays and granites) in vines above 80 years old with selected orientations and strict controls (grapes per vine). Late harvest, 100% manual in 18 kgs. cases. Third selection in the winery (on sorting table) with total destemming and a slight squeeze. Tanking and cold prefermentative maceration.
Long alcoholic fermentation with autoctonous yeasts at controlled low temperature in small inox tanks, made to measure for our winery. Malolactic Fermentation in stainless steel tanks with selected lactic bacteria. Ageing for 13 months in French oak casks of médium roastings.
Not filtered, clarified or stabilized to avoid loosing nuances in the wine. As a consequence, with time it might incorporate some totally natural sediment.
Color: Bright red with violet edge.
Aroma: Black berries, vanilla, dairies, toffee and cocoa.
Taste: Drinking tannic, silky and easy. Satiny, balsamic and persistent.
